Basic Clear Vegetable Soup
This is a classic for a reason. It's light, healthy, and easy to customize with whatever vegetables you have on hand.
Ingredients:
* Aromatics like onion, garlic, and ginger
* Carrots, celery, and your choice of other vegetables (peas, corn, green beans, cabbage, etc.)
* Vegetable broth or water
* Seasonings like salt, pepper, and herbs (bay leaf, oregano, thyme)
* A touch of vinegar or lemon juice for a bright finish
Method:
* Sauté the aromatics in a pot.
* Add the chopped vegetables and sauté for a few minutes.
* Pour in the vegetable broth and bring to a boil.
* Reduce heat and simmer until the vegetables are tender.
* Season to taste and serve, perhaps with a garnish of fresh cilantro or spring onions.
Creamy Vegetable Soup
This type of soup is rich and comforting, often made by blending the cooked vegetables. You can achieve a creamy texture without dairy by using ingredients like potatoes, sweet potatoes, or coconut milk.

Method:

Tips for great vegetable soup:
* Roast the vegetables first: Roasting vegetables like squash, carrots, or cauliflower before adding them to the pot can bring out a deeper, sweeter flavor.
* Add herbs and spices: Fresh or dried herbs and spices can completely change the character of your soup. Experiment with different combinations.
* Use a thickener: If you want a thicker soup without blending, you can create a slurry with cornstarch and water, or simply add a handful of oats or rice to the pot while it simmers.
