Pineapple Glazed Chicken Skewers
Ingredients:
For the Chicken Marinade:
- 1 pound boneless, skinless chicken thighs (or breasts), cut into 1-inch cubes
- 1 cup fresh pineapple chunks (reserve some for garnishing)
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon sesame oil
- Salt and pepper, to taste
For the Pineapple Glaze:
- 1 cup pineapple juice
- 1 tablespoon cornstarch
- 1 tablespoon brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon soy sauce
- 1/2 teaspoon crushed red pepper flakes (optional, for a kick)
For Assembling:
- Skewers (if using wooden skewers, soak them in water for 30 minutes)
- Fresh cilantro or green onions for garnish
- Lime wedges for serving
Instructions:
1. Marinate the Chicken:
- In a bowl, combine the chicken cubes, fresh pineapple chunks, soy sauce, honey, olive oil, minced garlic, grated ginger, sesame oil, salt, and pepper. Mix well to coat the chicken evenly. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
2. Prepare the Pineapple Glaze:
- In a small saucepan, combine the pineapple juice, cornstarch, brown sugar, rice vinegar, soy sauce, and crushed red pepper flakes. Stir well over medium heat until the mixture thickens, about 3-5 minutes. Remove from heat and let it cool slightly.
3. Assemble the Skewers:
- Preheat the grill to medium-high heat. Thread the marinated chicken and remaining pineapple chunks alternately onto the skewers.
4. Grill the Skewers:
- Place the skewers on the grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char. Brush the pineapple glaze over the chicken during the last few minutes of grilling for extra flavor.
5. Serve:
