 OMANIAN MISHKAK



Mishkak is a popular and traditional Omani street food that consists of marinated meat (usually beef, chicken, or mutton) grilled on skewers. It's a beloved dish, particularly enjoyed during holidays like Ramadan and at local festivals and celebrations.

Key characteristics of Omani mishkak:

 * Marination: The meat is cut into bite-sized cubes and marinated for an extended period, often overnight. The marinade is a flavorful blend of herbs and spices that can include ingredients like black pepper, cardamom, cloves, ginger, garlic, cayenne pepper, cumin, cinnamon, coriander, and tamarind paste. Some recipes also include raw papaya to help tenderize the meat.

 * Grilling: The marinated meat is threaded onto skewers and grilled over a hot charcoal fire. The goal is to cook the meat until it's tender and slightly charred on the outside without letting it become dry.

 * Serving: Mishkak is typically served with a spicy tamarind sauce or chili sauce. It can be enjoyed on its own, with a fresh salad, or placed inside warm bread to create a sandwich. It's also a common accompaniment to rice or bread for a more substantial meal.

The long marination time and the perfect balance of grilling are considered the secrets to a perfectly succulent mishkak.
