PALAK CHICKEN

Here are a few Palak Chicken recipes:

Palak Chicken (Classic)

 * Ingredients:

   * 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

   * 1 lb fresh spinach, washed and stemmed

   * 1 large onion, chopped

   * 2 cloves garlic, minced

   * 1-inch piece ginger, minced

   * 1 (14.5 ounce) can diced tomatoes, undrained

   * 1 tablespoon tomato paste

   * 1 teaspoon garam masala

   * 1/2 teaspoon ground cumin

   * 1/4 teaspoon ground coriander

   * 1/4 teaspoon red pepper flakes (optional)

   * Salt and pepper to taste

   * 2 tablespoons butter or ghee (optional)

   * Fresh cilantro, chopped, for garnish

   * Plain yogurt, for serving (optional)

 * Instructions:

   * Heat butter or ghee in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and ginger and cook until fragrant, about 1 minute.

   * Add chicken to the pot and cook until browned, about 5 minutes. Add diced tomatoes, tomato paste, garam masala, cumin, coriander, red pepper flakes (if using), salt, and pepper. Bring to a simmer, then reduce heat and cook until chicken is cooked through, about 20 minutes.

   * While chicken is cooking, bring a pot of salted water to a boil. Add spinach and cook until wilted, about 2 minutes. Drain spinach and squeeze out excess water.

   * Add spinach to the pot with the chicken and stir until combined. Simmer for 5 minutes more, then remove from heat and garnish with cilantro. Serve with plain yogurt, if desired.

Palak Chicken with Cream

 * Ingredients:

   * 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

   * 1 lb fresh spinach, washed and stemmed

   * 1 large onion, chopped

   * 2 cloves garlic, minced

   * 1-inch piece ginger, minced

   * 1 (14.5 ounce) can diced tomatoes, undrained

   * 1 tablespoon tomato paste

   * 1 teaspoon garam masala

   * 1/2 teaspoon ground cumin

   * 1/4 teaspoon ground coriander

   * 1/4 teaspoon red pepper flakes (optional)

   * Salt and pepper to taste

   * 2 tablespoons butter or ghee (optional)

   * 1/2 cup heavy cream

   * Fresh cilantro, chopped, for garnish

   * Plain yogurt, for serving (optional)

 * Instructions:

   * Follow steps 1-4 from the Classic Palak Chicken recipe.

   * Stir in heavy cream and simmer for 5 minutes more, or until sauce has thickened.

   * Remove from heat and garnish with cilantro. Serve with plain yogurt, if desired.

Tips:

 * For a richer flavor, you can add a tablespoon of cashew paste or almond paste to the recipe.

 * If you don't have fresh spinach, you can use frozen spinach, but be sure to thaw and squeeze out excess water before adding it to the recipe.

 * You can adjust the amount of spices to your liking.

 * Serve Palak Chicken with rice, naan, or roti.
