1. Simple Grilled Pomfret

This recipe is quick and easy, perfect for a weeknight meal.

Ingredients:

 * 1 pomfret (cleaned and scored)

 * 1 teaspoon chili powder

 * ½ teaspoon garlic paste

 * 1 teaspoon ginger paste

 * ½ teaspoon garam masala

 * ¼ teaspoon coriander powder

 * ¼ teaspoon cumin powder

 * 5-6 curry leaves

 * 2 tablespoons lemon juice

 * Salt to taste

Instructions:

 * Mix all the spice powders, ginger-garlic paste, and salt in a bowl.

 * Add lemon juice to make a paste.

 * Cut the curry leaves into two and add them to the paste.

 * Apply the paste to the fish and let it marinate for at least 1 hour.

 * Heat a grill pan and grill the fish until it is cooked through.

2. Goan Grilled Pomfret

 * 8 pomfret fish (cleaned and scored)

 * 2 tablespoons red chili powder

 * ½ cup hung curd

 * 4 tablespoons mustard oil

 * 2 tablespoons lemon juice

 * ½ teaspoon ginger paste

 * ½ teaspoon garlic paste

 * In a bowl, mix all the ingredients to make a thick paste.

 * Apply the marinade to the fish and let it sit for at least 30 minutes.

 * Preheat the oven to 180 degrees Celsius.

 * Grill the fish for 15-20 minutes until it is golden brown.
