Chicken Francaise
Ingredients:
- 2 large boneless, skinless chicken breasts (about 1½ pounds)
- Salt and pepper, to taste
- 1 cup all-purpose flour
- 3 large eggs
- 1 tablespoon water
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter, divided
- 1 cup chicken broth
- ½ cup dry white wine (like Sauvignon Blanc or Chardonnay)
- 2 tablespoons fresh lemon juice (about 1 lemon)
- 2 tablespoons chopped fresh parsley (for garnish)
- Lemon slices (for garnish, optional)
Instructions:
1. Prepare the Chicken:
- Slice each chicken breast in half horizontally to create thinner cutlets. Gently pound them with a meat mallet or rolling pin to about 1/2-inch thickness.
- Season both sides of the chicken cutlets with salt and pepper.
2. Bread the Chicken:
- Set up a breading station: Place the flour in one shallow dish. In a second shallow dish, whisk together the eggs and water.
- Dredge each chicken cutlet in flour, shaking off the excess. Then dip it in the egg mixture, allowing any excess to drip off.
3. Cook the Chicken:
- In a large skillet, heat the olive oil and 2 tablespoons of the butter over medium heat.
- Once the skillet is hot, add the chicken cutlets in batches (do not overcrowd the pan). Cook for 3 to 4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and keep warm on a plate.
4. Make the Sauce:
- In the same skillet, add the chicken broth and white wine, scraping up any browned bits from the bottom.
- Bring to a simmer and let it reduce for about 3 to 5 minutes.
- Stir in the lemon juice and remaining butter, swirling the pan to combine everything.
5. Combine:
- Return the chicken to the skillet to coat in the sauce for a minute.
- Remove from heat.
6. Serve:
- Plate the chicken cutlets and drizzle some sauce over them. Garnish with chopped parsley and lemon slices if desired.
- Serve immediately with your choice of side dishes like pasta, rice, or vegetables.
