Garlic Vegetable Soup Recipe
Ingredients:
- 2 tablespoons olive oil
- 6-8 cloves garlic, minced (adjust to taste)
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced (any color)
- 1 medium zucchini, diced
- 1 cup green beans, chopped
- 4 cups vegetable broth (low sodium)
- 1 can (14.5 ounces) diced tomatoes (with juice)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups fresh spinach or kale (optional)
- Lemon juice (optional, for serving)
- Fresh parsley, chopped (for garnish)
Instructions:
1. Sauté Aromatics:
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped onion. Sauté for about 3-5 minutes until the onion is translucent and fragrant.
2. Add Vegetables:
- Add the diced carrots, celery, bell pepper, zucchini, and green beans to the pot. Stir well and cook for another 5-7 minutes until the vegetables start to soften.
