Ingredients:
- 500g mutton, cut into pieces
- 300g basmati rice
- 2 large onions, thinly sliced
- 2 tomatoes, chopped
- 1 cup plain yogurt
- 4-5 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 1/2 cup mint leaves, chopped
- 1/2 cup cilantro (coriander leaves), chopped
- 3-4 whole green cardamoms
- 4-5 cloves
- 1-2 cinnamon sticks
- 2-3 bay leaves
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 4 cups water
- 3-4 tablespoons cooking oil or ghee
- Salt to taste
Procedure:
1. Marinate the Mutton:
- In a bowl, mix mutton with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. Let it marinate for at least 1 hour (or overnight in the refrigerator for better flavor).
2. Prepare Rice:
- Rinse the basmati rice in water until it runs clear, then soak it in water for 30 minutes. Drain the rice.
3. Fry Onions:
- Heat oil or ghee in a large pot. Add sliced onions and sauté until golden brown. Remove half for garnishing later.
4. Cook Mutton:
- In the same pot, add marinated mutton and cook for about 5-7 minutes until browned. Add tomatoes, green chilies, mint, cilantro, and whole spices (cardamoms, cloves, cinnamon, bay leaves). Cook until tomatoes soften.
5. Layering the Biryani:
- Add the soaked and drained rice on top of the cooked mutton. Pour 4 cups of water over the rice. Sprinkle garam masala and adjust salt if needed. Gently mix, being careful not to break the rice.
6. Cooking:
- Cover the pot with a tight lid. Cook on low heat (dum) for about 30-40 minutes until the rice is fully cooked and the flavors meld together. You can place a heavy pan or tava (griddle) underneath to prevent direct heat.
7. Serve:
- Once done, gently fluff the biryani with a fork. Serve hot, garnished with fried onions, and accompanied by raita (yogurt sauce) or salad.
