Chicken shami kebab
CHICKEN SHAMI KABAB
Chicken shami kabab is a popular South Asian kebab that is a delightful variation of the traditional minced meat patty. Unlike a typical kebab cooked on a skewer, shami kababs are shallow-fried patties with a distinct, soft texture.
What is a Chicken Shami Kabab?
A shami kabab is a small, round patty made from a mixture of minced meat (in this case, chicken) and chana dal (split Bengal gram lentils). The mixture is boiled or simmered with a blend of aromatic whole spices like cinnamon, cloves, black pepper, and bay leaves. After cooking, the mixture is ground, often with fresh herbs like mint and coriander, and then shaped into patties. An egg is sometimes added as a binding agent to help the patties hold their shape. The kebabs are then shallow-fried until golden brown and crispy on the outside, while remaining tender and succulent on the inside.
Key Characteristics
* Distinct Texture: The combination of minced chicken and cooked chana dal gives the kabab a unique, soft, and slightly fibrous texture that is different from other types of kebabs.
* Binding: The use of chana dal and sometimes egg acts as a natural binder, preventing the patties from falling apart during frying.
* Flavor Profile: The kababs are intensely flavorful, with a rich aroma from the whole spices used during the cooking process.
Shami Kabab vs. Galouti Kabab
While both are soft, melt-in-your-mouth kebabs, they have a key difference:
* Shami Kabab: Uses chana dal (lentils) and spices to create its signature texture and flavor. The mixture is ground after cooking.
* Galouti Kabab: Does not use lentils. Instead, it relies on a finely ground meat paste and tenderizing agents like raw papaya to achieve a silky, smooth texture that "melts in the mouth."
Shami kababs are a favorite appetizer or snack, often served with a side of mint-coriander chutney, sliced onions, and a squeeze of lemon. They can also be eaten with roti or rice.
